Ingredients

8 servings
  • 1 cangandules (beans)
  • 4 cupof white medium grain rice
  • 8 ozof tomato sauce
  • 1pimiento stuffed green olives (as many as you like, i usually do about 15)
  • 5 cupof water
  • 1 tbspof salt
  • 2 tbspof Goya brand Recaito (its a cilantro cooking base, usually found in a glass jar with a green lid and lable)
  • 2 tbspof Goya brand Sofrito (its a tomato cooking base, usually found in a glass jar with a red lid and lable)
  • 1 envelopeof Goya brand Sazón (usually found in a box, packets inside)
  • 1a dash of hot sauce if a kick is prefered
  • 2pork chops or boneless skinless chicken breasts (get medium sized chops/breasts, you dont want too much meat inside cause you'll probably have a meat on the side)

    Cut meat into nice bite sized cubes.

    Combine water, seasonings, cooking bases, meat, tomato sauce, olives, and beans into a pot. I use an aluminum pot, which is typically used to make rice by most hispanics.

    Turn fire to high and bring to a boil. Stir a few times to combine the flavors, don't let too much water boil out either.

  4. 4

    When it comes to a rapid boil add rice, stir after you add rice to mix the seasonings into it and to make the rice not clump. Then turn fire to low.

  5. 5

    Cover pot with aluminum foil to keep the steam in and then put a lid on top, this will keep in the pressure and steam as well. Its ok if some steam escapes but you want to try to keep in as much as possible.

    Time for 10min. After 10, fluff rice using a spatula or serving spoon, you just want to bring the bottom rice to the top, mixing the rice up is good too. This will help to cook all the rice evenly.

  7. 7

    Time for 10 more min, after this 10 repeat mixing process stated in step 6. At this time the rice should be done, if it is still a bit hard recover and cook a few more min until it is cooked through. If the problem is there isn't enough water its ok to add a bit more. Just make sure your steam stays in. If the rice is too wet, cook a bit longer but with the lid off and the foil cover open just enough to let steam out. When the rice is done to your likings turn fire off.
