Ingredients

4 servings

1 bunchkale (or 4 cups of spinach)
1 cupstrawberries (or 1 cup mango-can be frozen)
1/2 cupsliced almonds (roasted in butter if you have time)
Dressing
Juice from 1/2 lemon (or 1 lime -citrus brings out iron)
Halfas much oil (olive, grapeseed or whatever you have/like)
to tasteSalt and pepper(fresh ground better)
1bit of honey or maple syrup to sweeten (a tablespoon or so)

Steps

If use kale, chop into very small pieces. If baby spinach use as is.

Mix salad ingredients. Can add fresh coriander- especially good with mangoes and lime.

Shake dressing ingredients together, pour over salad and toss.
