Wash the cut beef head thoroughly, using a brush if needed. If there are any hairs, singe them off to remove.

Place the pieces in a large steamer pot. Put the brains in a well-tied bag to keep them from falling apart during cooking.

Add the bay leaves and avocado leaves. Blend the chiles with all the spices, onion, tomato, garlic, and vinegar until smooth.

Pour the blended mixture into the pot and add enough water to cover the beef head pieces.

Bring to a boil and cook for 4 hours, or until the meat is tender and easily separates from the bones.

During this time, cook over a wood fire if possible for extra flavor. The broth will also be delicious.

Serve with the broth, chopped cilantro, and onion.
