  • Maris piper potatoes
  • clovesGarlic
  • Salt and pepper
  • Rosemary
  • Goose or duck fat

Steps

    Peel potatoes

    Cut into even size

  3. 3

    Wash under tap for 2/3 minutes. This is a hugely important step. You want to remove all the starch from the potato.

    Add plenty of salt, and I mean plenty. They won’t end up salty this is used as a drying agent. Next blanch/part boil the potato until you see a while line appear around the outside of the potato. That is normally signify the outside being ready to get fluffed up.

    Fluff up the potato well. The potato if right, should leave a almost mash like potato residue in the pan. Add salt again and pepper to taste.

    Put the oven on max heat with plenty goose or duck fat in the oven. Leave to get smokey and hot. Whilst the potatoes cool down.

    Put spuds in the oven and let them start to brown.

    Crush garlic with the back of a knife and let the juices run add about 20 minutes in for the potatoes. Along with adding rosemary.

    Wait for the potatoes to brown and crispen.

    Serve to deserving friends only. These potatoes aren’t for everyone.
