Heat 2 tbsp olive oil in a large saute pan over high heat until very hot. While oil and pan are heating, salt and cayenne pepper the scallops to taste and then dust with flour.

Add the scallops to the saute pan and sear for 2 minutes on each side. Remove to a plate and serve with Basil-Mint Risotto.
