  1. Muffin batter
  2. 1 1/2 cupall purpose flour
  3. 1 tspbaking soda
  4. 1 tspbaking powder
  5. 1/2 tspsalt
  6. 1 1/2 tspcinnamon
  7. 3mashed bananas
  8. 1egg
  9. 3/4 cupbrown sugar
  10. 1/3 cupvegetable or canola oil
  11. 1 tspvanilla extract
  12. Streusel topping
  13. 2 tbspall purpose flour
  14. 1/2 tspcinnamon
  15. 1/3 cupbrown sugar
  16. 1 1/2 tbspcold butter

Cooking Instructions

    Preheat oven to 190°F C (375 degrees F). Use muffin cups or grease and flour muffin tray

  2. 2

    In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.

    Mash bananas in a large bowl. Add beaten egg, sugar, oil and vanilla.

  4. 4

    Gently mix in flour mixture to the banana mixture until just moist. Do not overmix. Add to muffin cups.

    In a small bowl, mix sugar, flour and cinnamon. Cut in butter and rub in to the rest until the mix looks like wet sand. Sprinkle a little over the top of each muffin

    Bake for 17-20 mins or until toothpick poked in to the middle of muffin comes out clean
