Ingredients

12 servings
  • Carrot Muffins
  • 2eggs
  • 1 cupsugar
  • 1 tbspvanilla sugar
  • 1/2 cupoil
  • 2baby carrot jars or 1 cup cooked carrots, blended
  • 1 cupflour
  • 1/2 tspbaking powder
  • 1scant 1/2 teaspoon baking soda
  • 1 tspvanilla extract
  • 1 dashof cinnamon
  • 2 tbspapple juice
  • Streusel Topping
  • 3/4 cupbrown sugar
  • 1/2 cupflour
  • 1/2 stickmargarine
  • 1generous sprinkle of cinnamon

Steps

  1. 1

    Preheat oven to 350.

  2. 2

    Beat the eggs.

  3. 3

    Add sugars and oil.

  4. 4

    Mix in rest of ingredients for muffins.

  5. 5

    Pour into cupcake holders or tins.

  6. 6

    Combine all streusel ingredients until you get a crumbly mixture.

  7. 7

    Sprinkle over muffins.

  8. 8

    Bake approximately 40 minutes.
