Ingredients

  • 1 lbred potatoes
  • 1 lbyams or sweet potatoes
  • 1 lbground beef
  • 1 can14.5 oz Italian stewed tomatoes
  • 1 1/2 tspground cinnamon
  • 1 tspground cumin
  • 2 cupmilk
  • 1/4 cupflour
  • 2 tbspbutter
  • 1/2 tspground nutmeg
  • 1salt and pepper to taste
  • 1egg yolk
  • 3 tbspgrated parmesan cheese

Steps

  1. 1

    Heat oven to 400°F

  2. 2

    Cook potatoes in microwave 5-7 mins

  3. 3

    Cook yams in microwave 7-9 mins

  4. 4

    Brown beef in skillet

  5. 5

    Add tomatoes, cinnamon and cumin. Simmer 3 mins

  6. 6

    Combine flour, milk, butter and nutmeg in a saucepan over medium heat stirring constantly

  7. 7

    Bring to boil and simmer one minute

  8. 8

    Season with salt and pepper

  9. 9

    Remove from heat and whisk in egg yolk

  10. 10

    Thinly slice potatoes

  11. 11

    Place half of potatoes and yams on bottom of 2 quart casserole

  12. 12

    Layer meat then remaining potatoes and yams

  13. 13

    Pour sauce on top

  14. 14

    Sprinkle with cheese

  15. 15

    Bake for 30 mins
