Cook pasta in boiling water.

2. In sauce pan, melt butter over medium heat. Add the onions and saute until translucent. Sprinkle flour and 1/4 tsp. dry mustard on top of sauteed onions and cook for 2 minutes.

3. Slowly add milk whisking while adding. Bring milk to a simmer and continue to simmer until thickened. Combine parmesan, cheddar, reserve 2 T. of combined cheese and slowly add the rest of cheese to thethickened milk, whisking while adding.

4. Once cheese is melted, add sour cream and whisk again. Season with salt and pepper to taste.

5. Preheat oven 350°F. Combine the cheese mixture and cooked pasta. Top with reserved cheese.

6. Bake for 25 minutes.
