mix water, sugar and yeast. set aside. about 15 minutes. it will be bubbly.

sift flour, salt and onion powder together

using the dough hooks on your mixer, add 4 cups of the flour to the water yeast mixture. beat until smooth. it will be sticky.

when the flour has been incorporated, begin adding the rest of the flour, slowly.

when the dough ball is smooth and shiny, move to a bowl lightly oiled. turn the dough ball to coat. cover with a damp warm towel and place in a warm spot. I tried snomeone's idea. In the oven with the light on. It works great.

let rise until doubled, about 1 hour.

when doubled, remove from the bowl and knock it down. divide into 3 balls. form into loaves, and place on cooking sheets covered with parchment paper.

cover with the warm damp towel and replace in the warm spot. let raise again.

after a half hour, it should almost double. remove and preheat the oven to 450°F. bake 20 to 25 minutes. when done baking, the loaves will sound hollow when thumped on the bottom. cool on wire racks.

this recipie is adapted to be low sodium, low calorie and low fat.
