Preheat oven to 190°F. celsius and line a flat baking tray with baking paper. leave extra paper hanging off front and back of tray to make lifting easier

place the eggs,castor sugar and vanilla into a blender.whisk on high for 5 minutes

add the flour to the mix, add on the side of the bowl to prevent knocking out air in the mix.

gently fold flour into mix using spatula

add the tblspn warm water and gently mix

pour the mix from a low height above the tray onto the baking paper in the tray. spread gently with spatula

bake for 10 to 15 minutes

once baked, place another sheet of baking paper onto a surface. sprinkle the top with castor sugar. carefully lift the sponge out of he tray and place upside down on baking paper.

cool completely and peel off top layer of paper

spread on filling of choice. gently roll into swiss roll using the parchment underneath
