Ingredients

  1. 1/2 cupmayo
  2. 1/2 cupsour cream
  3. 1 tbspmilk
  4. 2 tbspminced tomato
  5. 1 tbspwhite vinegar
  6. 1 tbspminced onion
  7. 1/2 tspparsley
  8. 1/2 tspsriracha sauce
  9. 1/4 tspsalt
  10. 1/4 tsppaprika
  11. 1/2 tspdried dill
  12. 1/4 tspcayenne pepper
  13. 1/2 tspcumin
  14. 1/4 tspgarlic powder
  15. 1/4 tsppepper
  16. 3boneless skinless chicken breasts
  17. 1 canblack beans drained
  18. 1 canMexicali corn drained
  19. 1hass avocado
  20. 1 smallblock cheddar cheese
  21. 1 cupchopped tomato
  22. to tastesalt and pepper
  23. 1 cupchopped green onion
  24. 1/2 boxsmall shell pasta
  25. 1/2 bagcrushed tortilla chips

Steps

  1. 1

    Cook pasta according to package directions and drain

  2. 2

    Season chicken breasts with salt and pepper and cook until juices run clear

  3. 3

    Meanwhile in a large bowl mix first 15 ingredients.

  4. 4

    Cube chicken and add to the bowl along with the pasta, tomato, onion, corn, and black beans. Mix to incorporate.

  5. 5

    Refrigerate for 4 hours to allow flavors to blend

  6. 6

    When ready to serve cube avocado and cheese. Add to bowl, along with tortilla chips, and stir to incorporate.

  7. 7
