Cut potatoes into wedges. Preheat oven to 375. Lightly spray 9x13 pan with cooking spray.

Make sauce in small bowl: combine water, sugar, honey, and olive oil.

Place sweet potatoes in pan in a single layer. Pour sauce over potatoes and turn to coat.

Cover and bake until tender, about 45 minutes, turning potatoes once or twice to evenly coat with sauce.

When tender, remove cover and bake an additional 15 minutes to caramelize the glaze.

Top with fresh cracked pepper and/or herb(s) of choice.
