
Vegan Quinoa Summer Salad

Steps

Pour water into sauce pan and bring to a rolling boil.

Add quinoa to water, cook for about 15 minutes or until quinoa "blooms" (it should have curled white stems around it)

Slice zucchini just thick enough to fry and chop scallion.

Pour olive oil in frying pan and turn heat on med-high.

Add corn, garlic, zucchini and scallions to oil and sauté until lightly browned.

Once quinoa is finished stir in vegetables getting as little olive oil as possible into quinoa.

Add dressing and stir everything together.
