Start by using wood chunks on your grill. Light em up for about 10 minutes and close the lid to get the smoke rolling.

While grill is warming up paint a layer of melted butter on both sides of the steak.

Liberally season both sides with salt and pepper to desired taste.

When you are a couple minutes from removing your steak from the grill, sprinkle on the peppercorn and mustard powder to both sides and close lid.

If your grill keeps spitting up a flame gently mist with water, enough to make smoke but not kill the coals.

I smoked a 4 course meal (steak, baked potato, baked beans, fresh green beans)all at the same time on my grill/smoker. Delicious!
