Ingredients

6 servings
  • 1egg, beaten
  • 3 tbspmilk
  • 1 1/4 cupfinely crushed Ritz crackers
  • 1 tspdried thyme, crushed
  • 1/2 tsppaprika
  • 1/8 tspblack pepper
  • 2 1/2 lbmeaty chicken pieces
  • 2 tbspbutter or margarine, melted

Steps

  1. 1

    In a small bowl, combine egg and milk. In a shallow dish combine crushed crackers, thyme, paprika, and pepper. Set aside. Skin chicken. Dip chicken pieces, 1 at a time, into egg mixture; coat with crumb mixture.

    In a greased 15x10x1-inch baking pan, arrange the chicken, bone side down, so the pieces arent touching. Drizzle chicken with the melted butter.

  3. 3

    Bake, uncovered, at 375 for 45-55 minutes or until chicken is no longer pink. Do not turn chicken pieces while baking.

  4. 4

    FOR 2 CUT-UP CHICKEN BREASTS: cook for 20 minutes.
