Ingredients

  • curry paste
  • 1 tsppeppercorns
  • 4 eachcloves
  • 2 tspcoriander seeds
  • 2 tspfennel seeds
  • 2 clovegarlic
  • 1 stickginger
  • 1 tbspturmeric
  • 1/2 tspsea salt
  • 3 tbsppeanut oil
  • 2 tbsptomato paste
  • 2fresh chilies
  • 4dried red chillies
  • 1 bunchcilantro
  • 1 tspfenugreek seeds
  • Main
  • 2 mediumonion - halve, finely slice
  • 4 clovegarlic - finely slice
  • 2fresh chilies - finely slice
  • 1 stickginger - puree
  • 4tomatoes - quartered
  • 2 lbmeat - diced
  • 1 bunchcilantro - chopped
  • 1/3 cupbalsamic vinegar
  • 1 tbsphoney

Steps

  1. 1

    Toast whole spices for paste in a frying pan on medium heat until golden. Grind to powder in food processor. Add rest of paste ingredients.

    Put stock pot on medium heat. Add some peanut oil and a pat of butter.

  3. 3

    Cook onions, garlic, chilies, ginger, cilantro for 10 min until golden.

  4. 4

    Add meat and paste. Season with salt and pepper. Add tomatoes, vinegar, honey, and 1 1/2 C water. Bring to boil then lower heat and simmer for 45 min with lid on.
