Combine sauce ingredients in small bowl and whisk to mix well.

Marinade chicken cubes in half the sauce, for a couple hours, reserve the other half.

Start cooking the rice (below)

Preheat broiler.

Arrange chicken in single layer on a baking sheet coated with cooking spray.

Broil 4-5" from heat for 7 minutes, turn and broil for 4 minutes more, or until chicken is no longer pink.

Meanwhile, pour reserved sauce into small pan and bring to a simmer.

Serve chicken over rice and pour sauce over the top.

Rice (1 ½ cups):

Add rice to 3 cups of water in a saucepan.

Bring water to a boil.

Cover and reduce heat to simmer for 15 minutes.

Remove from heat, let stand for 5-15 minutes covered.
