Ingredients

1 hour
2 servings
  • 2 largered peppers
  • 200 gramscanned chopped tomatoes
  • 1cous cous (measurement in instructions)
  • 1/2 tspgarlic powder
  • 1/2 tspchili powder
  • 80 gramsdrained canned sweetcorn
  • 1chicken breast
  • 1 tspmixed herbs
  • 1 pinchof rock salt

    Preheat oven to 180°C.

  2. 2

    Mix chopped tomatoes with herbs, spices, sweetcorn.

  3. 3

    Chop chicken into small strips/bite sized pieces.

  4. 4

    Cut the top off the pepper, remove the seeds etc.

  5. 5

    Measure the cous cous out by filling half a pepper. Combined with the chicken and taking into account swelling, I found this to be perfect. Mix into your tomato mixture.

  6. 6

    Place a dollop of cous cous mixture in the bottom. Add a layer of chopped chicken, and continue layering until your pepper is full.

  7. 7

    Wrap the pepper in foil, and place upright on a baking tray. Bake for around 35 minutes.
