Pasta and minced meat with bachemel scauce

I used to eat it alot when I was in Egypt, but when I came to the UK with my dad and my little sisters......we stopped eating it for a while because dad didnt know how to make it..... So I guessed and tried different ingredients till I prefected it.... And here it is!! :-)

Cooking Instructions

Boil the pasta.

Add oil in a pan and start cooking the meat with the chopped onions for about 5-6 minutes.

Add the tomato paste and mix very well.

Add the curry powder if used along with the mixed vegetables.

SCAUCE:

Melt butter at medium heat.

Add the flour a little at a time and mix quickly before it forms lumps.

Add the milk and mix continuesly.

Add slices of cheddar cheese. And keep stirring.

Add a pinch of thyme and add as much salt as you like.

PUT IT ALL TOGETHER:

Pre- heat oven 180 C.

In a rectangular glass dish add half the amount of pasta.

Then add the minced meat and spread evenly.

Add the other half of the pasta.

Then, layer the whole thing with the bachemel scauce.... Make sure that you get some scauce at the edges so that the pasta isnt dry from the edges.

Put in the oven for about 25-30 minutes or until lightly browned from the top.

Serve with delicious salad.

This dish is basically mac and cheese, except for the fact I didn't notice ahead of time that we'd run out of macaroni noodles. Fortunately, a box of penne rigate made a more than reasonable substitute. For the cheese blend, pecorino romano provided a nice earthiness, smoked gouda brought, well, a hint of smokiness, and cheddar gave the tang and texture you expect from a mac and cheese sauce. All were whisked into a bechamel base, which provided additional creaminess and prevented the oily runoff you sometimes get when melting cheese. Needless to say, the final dish was a huge hit with my wife and daughter, both of whom are cheese aficionados. As for me, I'm not as big a fan of mac and cheese, but I still enjoyed it just fine, especially sprinkled with a little smoky paprika. Robert Gonzal -
