Preheat oven to 400°F.

First, the filling. Peel and wash your apples. Chop into small pieces and put them in a bowl.

Add into the bowl, the sugar, the cinnamon, and the flour. Set aside for later.

Put in a mixing bowl, the flour and the butter. Slowly add the milk 1 teaspoon at a time.

Once the mixture in the mixer is fine enough, use your hands and (in the bowl) form a ball with your hands.

Move the dough ball to a counter with flour on it. First knead the dough on the counter and make it fairly flat.

Take a rolling pin and roll out the dough so it is very thin. Then, take a butter knife or cake icing spreader and lift the dough sheet onto an ungreased pan.

Make sure the sheet goes all the way up the sides of the pan. Don't trim the sides yet.

Dump the filling into the pan with the dough. If you want you can put another layer on top of the filling. Take a sharper knife and run it around the the outer edge of the pan.

(If you put a top layer on DON'T SKIP THIS STEP) Cut holes or lines in the top layer to allow air to get threw the pie.

Bake for 30-40 minutes. Put on an egg bath if desired.
