Preheat oven to 160°C.

In a bowl mix the butter with the sugar (save one tablespoon) to a creamy consistency. It should have a light colour.

Mix in the egg.

In a separate bowl, mix the flour, baking soda, salt and cinnamon.

Combine the buttery cream with the dry ingredients, while gradually adding the milk. You may need more, the pastry now should have a somewhat runny consistency.

Let it sit for a few minutes. Meanwhile peel the apples and dice them.

Fold the apples into the dough, and transfer them to a buttered baking dish

Spread the remaining spoonful of sugar on the top, and bake it for approx. 40 minutes, until golden brown, and after poking it with a toothpick, it comes out clean.

You can eat it hot, cold, with whipped cream, with ice cream... Your choice!
