Chop onion into fine pieces.
Spinach chopping is optional, but washing isn't! - 2
Heat a small pan on medium for 2-3 minutes.

Put butter or oil in pan. Butter boils when heated enough. Oil needs to be checked: Check by adding cumin powder or seeds if it has heated enough. If it has, the powder or seeds starts bubbling.

Add chopped onions. If they are red, sautee until they are golden. If they are white, sautee until almost transparent.

Add Spinach and sautee until it shrinks.

Add the spices and salt and mix well until you are satisfied.

Add eggwhites and mix well. Add more spices and salt if needed.
