Mexican Piggy Cookies

My husband says these taste very similar to the traditional ones he grew up with, but using vegetable shortening instead of butter would be best.
I got the cookie cutter on Amazon.

Mexican Wedding Cookies Mexican Wedding Cookies
These have a light and delicate texture! My family has been using this recipe for 20 years. We make them often during the Christmas season. This is the Mexican style version with pecan nuts. I heard this cookie is given to guests as gifts at Mexican weddings. The name for "snowball cookies" vary depending on the type of nut used. If pecans are used, it's Mexican, and if it's almonds, it's Russian. With walnuts, and with pistachios ... Sorry, I forgot all the names!I use the food processor to chop the nuts. I use my hands to combine the flour with the chopped nuts to prevent lumps. If it is difficult to roll the dough into balls, squeezing them tightly may work. I use whatever nuts are available at home: pecans, walnuts, almonds, etc. There are also recipes with hazelnuts and pistachio. Make delicious cookies with your favorite nuts. I used a US measuring cup (1 cup = 240 ml). Recipe by Mama Imani. cookpad.japan -

Sweet Potato Cookies Sweet Potato Cookies
I was given loads of sweet potatoes, so I adapted a cookie recipe to incorporate them.Baking time may vary on your oven so adjust accordingly. You can either add 1 tablespoon of sesame seeds into the mixture when preparing the dough, or scatter them on the dough before baking. You can use margarine for this recipe, but butter is best. These cookies taste great if there are small lumps of sweet potato remaining. Recipe by nathu cookpad.japan -

Mincemeat Cookies Mincemeat Cookies
If you've never heard of mincemeat, know this, there is no meat in it. Mincemeat is a spiced blend of diced apples and raisins and is absolutely AMAZING as a cookie. I hope you enjoy this version of the delightful cookies! StephieCanCook -
Sweet Potato Cookies Sweet Potato Cookies
I make these as a snack when I'm dieting. For non-dieters, substitute butter for vegetable oil. They're even more delicious that way.Straining the sweet potatoes gives a smoother texture, but if it's too much trouble, just mashing is fine!Be sure to bake them to a nice aromatic finish.
