Ingredients

  1. Biscuits----------------
  2. 1-1/2 cupbuttermilk
  3. 1/3 cupvegetable oil
  4. 3 cupsself-rising flour
  5. 1/4 teaspoonsalt
  6. Potatoes-------------------
  7. 4medium potatoes
  8. 2 ouncebacon 2 slices
  9. 1 teaspoonseasoned salt
  10. 1/2 teaspoongranulated garlic
  11. 1/2 teaspoonground black pepper
  12. 1/4 cupvegetable oil
  13. Pancakes------------------
  14. 1/2 cupsugar
  15. 2 cupself-rising flour
  16. 1-1/2 cupbuttermilk
  17. Pork------------------
  18. 1-1/2 poundcubed pork chop
  19. 1 teaspoonseasoned salt
  20. 1/2 teaspoongranulated garlic powder
  21. 1/2 teaspoonground black pepper
  22. 1 cupself-rising flour
  23. As neededoil to medium fry in
  24. Grits---------------------
  25. 2 cupgrits / polenta
  26. 1-1/4 teaspoonsalt
  27. 6 cupswater
  28. 1 stickbutter
  29. 6 ouncesshredded sharp cheddar cheese I used Cabot from Vermont
  30. Tomato gravy-----------------
  31. 2/3 teaspoonsalt
  32. 15 ouncecan diced tomatoes
  33. 2 tablespoonsflour
  34. 2/3medium diced onion
  35. 1/2 teaspoongranulated garlic powder
  36. 1/2 teaspoonground black pepper
  37. Extras-------–-----------
  38. 7 slicesbiscuit ham/ Canadian bacon
  39. To tastesyrup for pancakes
  40. 8large eggs

Cooking Instructions

    Preheat oven 400 degrees Fahrenheit

    Mix the salt flour buttermilk and oil and form a giant dough ball

  3. 3

    Grease and flour a heated skillet

  4. 4

    Form 7 biscuits and put into the skillet. Put into oven for 15 minutes. When done set aside with a towel on top.

    Boil the water add the grits as its boiling stirring constantly leave NO lumps

  6. 6

    Add butter after boiling and stirring for 10 minutes.

    Shred the cheese

  8. 8

    Add cheese and cover off the heat

    Heat oil in skillet and dice the potatoes don't peel them. Add diced onions

    Bread and season the cubed pork

  11. 11

    Fry the potatoes till done and add 1/4 cup water cover and let steam.

    Fry the chops till done and set aside. Remove most of the oil except 1/3 cup leave it in the skillet for the tomato gravy

    Fry the onion in the oil and skillet you fried the chops in

  14. 14

    Add the tomato to the onions season and add the flour

  15. 15

    Simmer stirring occasionally and taste, if a little salty you got it right, set aside.

    Mix the buttermilk, flour, and sugar make a batter pour on the hot skillet and cook them as you would regular pancakes. These will be small ones

    Heat the Canadian bacon. Cook the eggs I scrambled these.

    Plate serve I hope you enjoy!! The pork chops can be substituted with steak, fish, or chicken.

    When you done cooking and eating this it's time to sit on the front porch with your feet propped up sipping iced tea!!

    Oh the tomato gravy goes on top of the grits!
