Ingredients

  • 1 cupPumpkin purée
  • 1 mediumonion
  • 4 cupVegetable broth
  • 1/2 cupWhite wine
  • 2 tbspOlive oil
  • 4 cloveGarlic (chopped)
  • 4 ozGoat cheese, cream cheese, or ricotta
  • 1 tspSalt
  • 1/4 tspPepper
  • 1as needed Parsley
  • 1/2 tspNutmeg
  • 1as needed Red Pepper flakes
  • 1 bunchPasta

Steps

  1. 1

    Dump all ingredients in large pot

  2. 2

    Turn stove on to high heat and let everything sit

  3. 3

    Once it comes to a boil set a timer for 9 minutes

  4. 4

    Stir often

  5. 5

    Take it off the burned and add cheese
