Ingredients

  1. 3 cupwhole wheat flour
  2. 1 tspsalt
  3. 1 tspbaking powder
  4. 1/3 cupvegetable oil
  5. 1 cupwarm water

Cooking Instructions

  1. 1

Combine the flour , salt, baking powder.

  2. 2

Add the oil and mix well until the flour has a sand like consistency.

  3. 3

Add the warm water and mix with your hands or a standing mixer until well combined.

  4. 4

Knead the dough for about three minutes and let it rest for twenty minutes

  5. 5

Divide the dough into about 16 small equal portions.

  6. 6

Heat and pan onto medium low heat and then lightly flour the surface and flatten out the balls and roll into 6'7" diameter to thin tortillas.

  7. 7

Once the pan is hot place the tortillas and allow to cook just before any brown spots appear.(keep the heat low prevent them from browning). Repeat with all

  8. 8

Let them cool on a wire rack. Stack the up and cut into triangles as you like.

  9. 9

Preheat the oven to 300°c . Spray a baking sheet with oil

  10. 10

In a bowl mix 1 1/2 tsp sea salt,1 1/2 tsp cumin powder,1/2tsp ground black pepper, 1/2tsp of paprika, 1 1/2 tbsp oil and juice of one lemon.

  11. 11

Toss the chips in the bowl until all is well combined. ( this step is optional you could keep them plain , although I recommend it).

  12. 12

Lay the chips onto the baking tray. Tip -dont overcrowd it. Bake for 6-7 minutes until crisp and the edges have slightly browned.

  13. 13

Serve with your choice of dips and sauces.

i finally managed to roll out the dough to a 6 foot 7 inch circle, but could not find a pan big enough to cook it. Also it took all of the dough and still it was extremely thin, how do you move it to the pan?
