  • 1 eachlime & lemon
  • 1Chili powder
  • 1cilantro, dried or fresh
  • 1Lemon pepper
  • 1Aluminum foil, 4 large squares

    Prepare chicken breasts by skinning, or buy already skinned chicken. Place one chicken breast per square of aluminum foil, placing it in the middle of the sheet. Sprinkle on all the ingredients except for the lemon and lime. When adding the different spices, don't go overboard, but place enough on there to cover the top of the chicken in a coat. I prefer to have frozen lemons and limes for this part and always keep a few in my freezer, but fresh will work. With a small grater, grate the lemon and lime, roughly 1/4 of each per chicken breast allowing it to sit on top of chicken. Grating the peel of each with the inside adds more vitamins and better health factors to the dish, and I highly recommend it. Wrap and seal each individual breast, locking all ingredients inside.

    Place in oven on a baking sheet. Oven should be set to 400°F, and set the timer for a half hour. When finished, pull out of oven, open aluminum casing and using a meat thermometer, make sure inside reaches 165°F. Serve with rice and/or green vegetables, and you have a complete meal! Enjoy!
