Combine oats, coconut, nuts and flaxseed in large bowl.

Heat brown sugar, oil, honey, cinnamon, and vanilla in microwave until bubbling.

Pour over oat mixture and mix well.

Thinly spread on baking sheet and bake at 300°F for 15 min.

Remove from oven. Stir. Return to oven for an additional 15 min or until oats are toasted.

Stir well to break up mixture then cool thoroughly. Store in airtight container.

Bakers tip - May add craisins, dates, or raisins. Serves 25 (1/2 cup serving) 230 calories, 30g carbs, 6g protein, 10g fat.

Bakers tip - Double brown sugar and honey for clumpy granola. Sprinkle more cinnamon on mixture before baking for more flavor.
