Put flour into a bowl with the salt. Make a well in the centre and add the eggs with a little milk.

Whisk the ingredients, gradually incorporating the flour and the rest of the milk. Whisk until smooth.

Leave to rest for 30 minutes.

Preheat oven to 220°C.

Pour the oil into a roasting tin.

Add the sausages.

Cook for 5-10 minutes or until the sausages start to look brown.

Reduce oven temperature to 200°C.

Carefully pour the batter around the sausages.

Cook for a further 30 minutes or until the batter is golden and crisp.
