Ingredients

  1. 2 cupsfine semolina (about 320 grams)
  2. 3/4 cuphigh-quality clarified butter or ghee (about 170 grams)
  3. 3 tablespoonsrose water
  4. 3 tablespoonsorange blossom water
  5. 2.2 poundsmozzarella cheese (about 1 kilogram)
  6. 1 cupsimple syrup for topping (about 240 ml)
  7. Chopped pistachios for garnish

Cooking Instructions

    Toast the semolina with the clarified butter or ghee over medium heat until it turns golden. Add the rose water and orange blossom water and mix well.

    Press half of the semolina mixture firmly into the bottom of a baking pan.

    Bake in the oven for about 3 minutes.

    Remove from the oven, spread the mozzarella cheese evenly over the base, then cover with the remaining semolina mixture and press down gently.
