  • 2 kgpinnekjøtt
  • 1kålrot
  • 100 gramssmør
  • 1gulrot i biter
  • 2mandelpoteter
  • 1/2 tspmuskat
  • 50 gramsribbefett
  • 1 tspsalt
  • 1pepper
  • 1poteter

    Beregn ca 500 gram pinnekjøtt pr person. Legg pinnekjøttet i vann over natten. (På den måten blir pinnekjøttet mindre salt og mykere). Legg pinner (eller noe annet som tåler å kokes, og som hindrer at kjøttet kommer i kontakt med vannet) i en kjele. Legg i pinnekjøttet. Ha i litt vann, men ikke så mye at det kommer i kontakt med pinnekjøttet. Sett på lokk. La det dampe. Absolutt minimum er to timer, men aller helst burde tre timer. Pinnekjøttet har bare godt av å dampe ennå lenger. Pass på at ikke kjelen blir tørr. Etterfyll eventuelt med vann. (Etter at kjøttet er dampet, liker mange å steke kjøttet noen minutter under grillelementet i ovnen før servering.) Fjern skallet på kålrabien. Del den opp i biter. Ha bitene i kjelen med gulrot og to poteter. Kok bitene møre i godt saltet vann. Sil av. Mos inn smør, ribbefett og muskat, gjerne med stavmikser. Smak til med salt og pepper. Server pinnekjøttet med kålrabistappe og kokte mandelpoteter.
