Ingredients

  1. 2Boneless Chicken Breasts, diced and cooked
  2. 1Red Onion
  3. 2 tbspSoy Sauce
  4. 1 tbspLemon Grass
  5. 1 tspAsian Fish Sauce
  6. 1 CanCoconut Milk
  7. 3/4 CupPeanut Butter
  8. 2 tbspBrown Sugar
  9. 2 tbspfreshly grated Ginger

Cooking Instructions

    Saute red onion in butter until browned. Add soy sauce, sugar, fish sauce, lemon grass and ginger. Saute over low heat for 5-10 minutes.

    Add coconut milk, cook over medium low 5 minutes.

  3. 3

    Add peanut butter, use barmixer to blend.

  4. 4

    Serve over chicken with rice or pasta and vegetables.
