Ingredients

  • 5bratwurst
  • 2 canbeer
  • 2large onions, sliced, divided
  • 1 tbspolive oil
  • 2red or green bell peppers, cored and sliced
  • 1salt
  • 1pepper
  • 6buns or hoagie rolls
  • 1mustard

    Pierce bratwurst all over with a fork.

  2. 2

    In a medium pot, combine the bratwurst, beer, and half of the onions. Bring to a simmer over medium-high heat.

  3. 3

    Simmer for 15 minutes or until the brats are firm and cooked through

  4. 4

    Transfer the brats to a plate and reserve some of the cooking liquid.

  5. 5

    Meanwhile, in a large skillet, heat the oil over medium-high heat.

  6. 6

    Add the remaining onions and sliced bell peppers and cook for 15 minutes, or until they are very soft, tossing occasionally.

  7. 7

    Add the bratwurst in the last 5 minutes to lightly brown. If the vegetables begin to get too dark add some of the reserved cooking liquid.

  8. 8

    Salt and pepper to taste.

  9. 9

    To serve spread mustard on the bun or hoagie roll, insert a bratwurst and top with onions and peppers.
