Preheat the oven to 200c

Chop the aubergines
- 3
Salt the aubergines and place on kitchen towel for 10 mins to draw out excess moisture
- 4
Chop the courgette and mushrooms
- 5
Chop the onions and red pepper, finely dice the garlic
- 6
Tip the tomatoes into an oven proof dish. Add fresh thyme leaves, garlic, paprika, mixed herbs, salt and pepper. Mix in.

Layer in vegetables alternating between them. Place in the oven for 20mins
- 8
Remove from the oven and place the sausages on top. Cook for another 20mins
- 9
Serve and enjoy
