Marinade the chicken 3-6 hours before or overnight with the garlic and a pinch of salt.

Heat the olive oil with the butter and chorizo on a medium to high heat when ready to cook.

Remove the chorizo pieces before adding the onion

Brown the onion which roughly takes about 5 minutes. Add the bay leaf also.

Add the chicken, peppers, carrot, potato, tomato paste, wine, paprika, chilli powder and water.

Cook for about 20 minutes.

Add the salt and pepper.

Add the peas and cook for a further 20 minutes or so.

Add parsley 5 minutes or so before removing from the stove.

Check seasoning and serve.
