Steps

Add olive oil and brown onions over medium heat in stew pot

Add in chicken pack (bones and all) and cook until white

Add ~500ml boiling water and let the chicken get soft

Remove chicken and place on a plate to cool. Once cooled, pull off meat and but back into pot. Add bay leaf and stock cube at this stage

Add sliced potatoes into pot and cook until potatoes are medium soft on high heat
- 6
Turn down heat and add both cans of tomatoes and the corn
- 7
Season with chili, cayenne, salt, pepper, and tabasco
