Blueberry fudge

Cooking Instructions

Bring the mixture to a boil and then simmer for 10-15 minutes, storing constantly.

Weigh out ingredients and place into a large non-stick saucepan, over a low to medium heat until the sugar dissolves. Add in the blueberries and mix them in.

Take care with the mixture as it very hot. To test if it is ready, drop a little bit of the mixture into a mug of cold water, a ball or solid shape should form in the water.

Remove from the heat and beat the fudge until it is very thick and is starting to set.

Pour into whatever mould you prefer and let cool in the refrigerator for around 2-3 hours.

Cut into chunks of your choosing and enjoy. :-)
