My husband loves granola in the morning but store bought granola was always too sweet. My recipe uses healthy coconut oil, shredded coconut and honey for just the right sweetness. If you prefer a sweeter granola feel free to add more honey : )

Ingredients

  1. 3 1/2 cupOld fashioned rolled oats
  2. 1 cupShredded sweet coconut
  3. 1/4 cupChopped pecans
  4. 1/4 cupChopped walnuts
  5. 1/4 cupSliced almonds
  6. 1 cupRaisins
  7. 1 cupChopped dried fruit (peaches, cranberries, etc)
  8. 7 tspCoconut oil
  9. 5 tbspHoney
  10. 1 pinchCinnamon, Nutmeg
  11. 1/2 tspVanilla bean extract

Cooking Instructions

    Turn on oven 325°F.

    Combine oats, nuts, and coconut in a large bowl.

    Heat coconut oil, vanilla and honey in a small skillet and pour over oat mixture

  4. 4

    Sprinkle cinnamon and nutmeg. Toss to coat and spread mixture on baking sheet. Bake at for 20 minutes or until golden brown.

    Cool completely and mix with dried fruits.
