Spinach Stuffed Mushrooms

Pre-heat the oven to 400°F

Clean the mushrooms and remove stems. Mince the stems and set aside as they will be part of your stuffing

Heat a small non-stick skillet over medium heat, spray with cooking spray. Add the minced garlic, onion and mushroom stems. cook for a few min.

Add the spinach to the skillet a little at a time and cook down

Remove filling from heat. Line a cookie sheet with aluminum foil and spray with cooking spray

place the mushrooms onto the cookie sheet

Mix in a food processor the spinach mixture, cream cheese and basil until well blended

Add the filling into a baggie and cut a little corner off

Squeeze the filling into each mushroom. Really fill each mushroom, you will have plenty of left over filling

Top with parmesan cheese and bake for about 20 minutes!

If you would like to add some meat, saute about 2 links of turkey/chicken sausage and add it into the food processor while mixing the filling
