Ingredients

4 servings
  1. 6boneless chicken breasts
  2. 1 tbspvegetable oil
  3. breading
  4. 2 tbspcornmeal
  5. 1powdered chicken broth
  6. 3 tbsppowdered taco shells/corn flakes
  7. 16very finely chopped nuts (any nut to your liking. I used pecans)
  8. salt
  9. 1egg

    Boil the chicken breasts for about 10 min. or until well cooked.

  2. 2

    Meanwhile, mix all of the ingredients for the breading except the egg in a bowl. Add a pinch of salt for a little flavor and moisture.

  3. 3

    Beat the egg in a bowl until homogenous.

  4. 4

    Remove the chicken breasts from the fire when cooked and cut then in half by the midsection.

  5. 5

    Cover the pieces in egg and then in the breading mixture.

  6. 6

    Place in a previously heated pan at low heat with the oil (so the nuts don't burn) and fry until all the surface is cooked (about 3 min.)

    Remove quickly and place on a paper napkin.
