For saffron layer

Peel and chop carrots. Blanch them for 2-3 minutes. Cool and blitz in the blender to form a paste. I kept it a bit chunky.

Add tomato ketchup, chopped onion, salt and pepper. Mix everything well.

For the white layer

Take paneer in a blender and blend to make a smooth paste. If it’s too thick, you can add one or more tablespoons of milk. Set consistency of a smooth paste.

Add chopped coriander, onion, salt and pepper. Mix everything well.

For green layer

Blanch spinach leaves in hot water for 5 minutes. Cool and puree in a blender.

Add mayonnaise, salt and pepper. Mix well to form a spreadable paste.

Assembling the sandwich

Trim the sides of all the bread slices.

Apply carrot, spinach and paneer spreads on one slice of bread each.

Arrange green, white, orange slices on above the other and top with plain slice.

Press the slices slightly to stick then together and cut diagonally to form triangular shape.

Repeat with remaining slices.
