Cook the tripe and honeycomb in a pressure cooker with the water, salt, cumin, and spices of your choice for about 45 minutes. Drain and set aside.

In a pot, sauté the onion, chorizo, bay leaf, and chili pepper (if using mild chorizo) in olive oil.

Add the tomato sauce and broth. When it starts to boil, add the cooked tripe and honeycomb.

Let it simmer until the broth reduces, then serve in a clay pot.
