Ingredients

  1. For spinach pesto:
  2. 2 tblscashews
  3. 1 cupsloosely packed spinach leaves (6 oz.)
  4. 1small bunch basil or corianderleaves
  5. 1/2lemon juiced
  6. 1/2 tspsalt
  7. to tastepepper
  8. as requiredOlive oil
  9. spinach pesto pasta:
  10. 1 Cupnoodles pasta. Or. Any of choice
  11. 1 tspolive oil
  12. 1/2onion (or diced
  13. 2 clovesgarlic minced
  14. 1/2 cupreserved oil

Steps

    Bring a pot of generously salted water to a boil, and cook your pasta according to package directions. Drain it,

    Add the cashews to your food processor and pulse a few times until crumbled.

  3. 3

    Add the spinach, basil, lemon juice, salt, and pepper, and continue to pulse.add olive oil.
    more lemon juice to taste if desired. and set aside.
    spinach pesto pasta:

    In a large pan, heat butter over medium heat. Add the onion or shallot and a sprinkle of salt. Continue to cook, stirring occasionally, until the onion is softened and browning slightly

  5. 5

    Add the garlic and cook for just about 60 seconds more, stirring occasionally, until the garlic is fragrant.

  6. 6

    Add the cooked pasta, r, and pesto and fold everything together gently. Reduce the heat to medium-low and cook, stirring frequently, until the sauce has thickened slightly and clings to the pasta,.

  7. 7

    Ready to eat
