This spicy vegetarian black bean soup will warm u up from the inside out. This healthy & east recipe is vegan & gluten free.

Ingredients

  1. 1 cupCooked black bean
  2. 1capsicum diced
  3. 1zucchini diced
  4. 1/4 cupsweet corn
  5. 3 handfulspinach leaves
  6. 1onion
  7. 1tomato
  8. Ginger garlic paste
  9. Taco seasoning
  10. Oil to season

Cooking Instructions

  1. 1

    In a pot heat 3tbsp oil, add sliced onions, after it turns golden brown add 2tsp of taco seasoning mix, then ginger garlic paste & tomato. Fry untill it leaves the oil.

    Add the vegetables. Stir for 3-4mins

    Add the cooked beans & adjust the salt to taste.

  4. 4

    Add desired amt of water which is left from cooked beans. Allow it to boil for 10-15mins.

    Enjoy as soup or with a bowl of rice & sliced avacadoes for a fulfilling meal.
