1 lbcubed, peeled Yukon gold potatoes
1/4 cup1% low fat milk
2 tbspmarscapone cheese
1/2 tspsalt

Place potatoes in a large saucepan, cover with water.

Bring to a boil, reduce heat and simmer 15 minutes or until tender. Drain. Return potatoes to the pan.

Add remaining ingredients. Mash to desired consistency.
