Ingredients

30 mins
  • 2 lbChicken
  • 60 ozWhite beans
  • 20 ozEnchilada sauce
  • 8 ozBacon chopped
  • 10 cloveGarlic minced
  • 8 cupChicken stock
  • 2 canCorn
  • 1Onion chopped
  • 1/2 bunchCilantro finely chopped
  • 2 tspCumin
  • 1 1/2 tspChili powder
  • 1 1/2 tspOregano
  • 1 as neededBacon grease
  • 2Limes quartered
  • 2Jalapeños seeded & diced
  • 2Chile peppers seeded & diced
  • 1Habanero seeded & diced
  • 2 cupRice

Steps

30 mins
  1. 1

    Cook chicken first and cut up into small pieces.

  2. 2

    Fry up bacon and set it on a plate and chop it up.

  3. 3

    Put grease in pot with onion and garlic. Cook until the onions begin to brown.

  4. 4

    Dump in the rest of ingredients and bring to a boil. Once that happens turn heat down and let it simmer for 50 mins. Let sit to cool and let flavors combine for 5 mins.

  5. 5

    Serve with rice on the side (add what you want to soup).
