Whisk aquafaba & white wine vinegar in a grease free bowl for at least 15 minutes, check to see if when turned upside down the meringue moves, if so continue to whisk, once firm and the meringue doesn't move when the bowl is turned upside down whisk in the sugar tablespoon at a time until firm and glossy and we'll mixed.

Spoon or pipe on parchment or non stick silicon sheet place in oven @ 100°c for between 1½ to 2½ hours until meringues are firm, time varies depending on the size of the merigues. Turn the oven off and allow to cool completely before removing the meringues
