Ingredients

  1. 28vanilla wafers, crushed
  2. 3 tbspbutter, melted
  3. 2 tbspsugar
  4. 1 cupsugar
  5. 1 pinch12 ounce frozen raspberries, thawed
  6. 4 tspcornstarch
  7. 16 ounce white chocolate baking bar
  8. 4 packages8 ounce cream cheese, softened
  9. 4eggs
  10. 1/2 tspalmond extract
  11. 1whipping cream

Steps

  1. 1

    crumb crust--Mix crushed vanilla wafers with 2 Tbs sugar and 3 Tbs butter. Press into 9" springform pan.

    Puree raspberries and press through fine sieve to remove seeds.

  3. 3

    Stir cornstarch into raspberries.

  4. 4

    Cook over medium heat until boils and thickens. Boil 1 min stirring constantly. Cool

  5. 5

    Melt while chocolate, cool slightly

  6. 6

    Beat cream cheese and 3/4 cup sugar just until smooth.

  7. 7

    Add melted white chocolate, eggs, and almond extract. Beat until well blended.
