Grate cheese with flour and shuffle.

In a bowl add 2.5 dl of cold water, salt and butter, sliced and diced. Gradually warm up over low heat.

When water boils, add the flour and grated cheese and cook stirring constantly for 5 minutes. WARNING: Mass has to distance itself from the walls of vessels.

Remove from heat, wait 5 minutes and stir in the eggs one at a time until the mixture is smooth and firm.

Roll out the dough, cut glass muffins, arrange them in a greased baking pan not far from each other, they will rise during baking.

Coat with egg yolk diluted with 2-3 drops of water and bake 15 minutes without opening the oven.
